Recipes to prepare Yucatecan desserts

A trip through Mexico won’t be complete until you taste the wonderful gastronomy of Yucatan. Their traditional recipes are the perfect blend of flavors. A great reference of this is the delicious Yucatecan desserts that we are going to share. Take note of each ingredient as well as the instructions so that everything goes perfectly.
Candy of Papaya with Edam Cheese
It is one of the easiest desserts to prepare in Yucatan. The recipe varies from the person who prepares it, but this is the traditional recipe:
- 4.5 lbs of Papaya
- Baking powder
- 3 Leaves of Fig
- 2 tablespoons of vanilla extract
- 3 pieces of cinnamon
- 1 oz. of grated Edam Cheese
- 1 liter of water
Instructions: Peel the papaya very well, remove all the seeds and cut it into pieces. Dissolve the baking powder in 1/2 liter of water and soak the papaya for 6 hours to remove all its resin. Wash the papaya very well to remove all the baking powder. Now put the papaya, the fig leaves, the cinnamon, the sugar, and the vanilla to boil in the half liter of water until the syrup thickens and the papaya is soft. Remove from heat and wait for it to cool. Serve the papaya on a plate with a little syrup and decorate with the Edam Cheese.
Caballeros Pobres ( Poor Gentlemen)
This is our favorite Yucatecan dessert. It is prepared with the French bar; the traditional bread of Yucatan, which is long white bread.
- One bar of bread
- 125 ml of Milk
- 125 ml of Condensed Milk
- 1 teaspoon of Vanilla
- 5 whipped egg whites
- 1 liter of water
- 3 cloves
- 1/2 cup of raisins
- 1 piece of cinnamon
- 1 ½ cups of sugar
Instructions: Cut the bread diagonally. Mix the two kinds of milk and the vanilla in a deep bowl. Soak each slice of bread in the mixture and then cover with the egg. Fry each slice in the oil, drain and let cool. To prepare the syrup, you only need to boil water, cinnamon and 3 cloves for 30 minutes until the syrup thickens. Now, you only need to accommodate the poor gentlemen on a plate, bathe them with the syrup and decorate with raisins.
Maja o Manjar Blanco
This dessert is one of the most delicious in Southeast of Mexico. It is very traditional to prepare it during hot seasons, and it is a delight for the palate.
- 4 cups of Milk.
- 1 coconut without skin.
- 1 oz. of sugar.
- 2 pieces of cinnamon.
- 3 teaspoons of cornstarch.
- Cinnamon powder.
Instructions: Heat 2 cups of milk with cinnamon. Blend the coconut with a cup of milk and add it to the previous mixture. In the remaining cup of milk, mix the cornstarch and pour it into the mixture. Let it boil for 6 minutes until it thickens. Serve cold in glasses or cups and sprinkle cinnamon powder to decorate.
